4.07 ha which consist of the plots of Flawinne, Le Moulin, Fabiola, La Cabane and Le Puits.

Our Chardonnay is entirely vinified in a parcelled manner. It is then assembled in order to combine the particularities of each plot. This blend is favored because of the balance it allows us to achieve between the aromatic opulence of the Flawinne plot and the tension and length characterized by the Puits, Fabiola and La Cabane plots. During more complicated years, some plots will be excluded from the blend if they are considered to be of insufficient quality. These excluded plots will then be distilled and aged in barrels in our attics for many years.

Strict control of yields (disbudding and green harvesting), manual harvesting, sorting of grapes upon arrival at the winery. Direct pressing in whole clusters. Alcoholic and malolactic fermentation in oak barrels and aging for 12 months. After racking, aging then continues in tanks on lees for 8 months, for a total duration of 20 months.

The racy bouquet harmoniously combines notes of white flowers and citrus fruits. Its texture is ample and silky with a precision resulting from a balance between tension and acidity. Its length is characterized by freshness offering a persistent finish where mineral and vanilla notes stand out.

A single-plot cuvée from La Cabane.

Strict yield control (disbudding and green harvesting), hand-harvesting, and grape sorting upon arrival at the winery. Direct pressing of whole clusters. Alcoholic and malolactic fermentation in oak barrels (François Frères) followed by 12 months of aging. After racking, the wine is aged for an additional 8 months on lees in stainless steel tanks, for a total maturation period of 20 months.

A lively, crystalline bouquet that harmoniously blends elegant, delicate floral notes. The wine is defined by a slender density and a distinctly cool-climate freshness. The finish offers persistent tension, characterized by notes of candied fruit and a saline quality.

Blend from the Flawinne and Puits plots

Very strict control of yields (disbudding and green harvesting), manual harvesting, sorting of grapes upon arrival at the winery. 100% destemming. Aging in oak barrels for 12 months.

Fine nose of small red fruits with notes of cherries. The bouquet reveals a slightly smoky and undergrowth character. The wine is characterized by harmonious lightness and silky tannins. Its texture is delicate and contrasts with the denser and more extracted Pinot Noirs. The acidity is fine and persistent, which implies favorable aging. Young or old, we particularly appreciate its energy and its vibrance. We are particularly proud to be able to vinify a Pinot Noir characteristic of our terroirs that defies the approach of the more classical Pinots Noirs.
